I really can’t say it enough: tilapia is the fastest, tastiest dinner I have ever made. From the outside it looks like I spent time cooking it, but in reality I spend more time mincing the garlic and measuring out the ingredients.
My Mom always comments that she won’t eat tilapia because they’re grown in netted off fish farms, fed a mixture of feces in horrible conditions. I know, you wish I didn’t tell you that here as you’re just looking for a recipe! I try to push it out of my mind when I eat it, too. I like to think that she just caught some Dateline Special about an illegal farm and that not all are like that. Right? RIGHT?!
Maybe this is more like it. It’s unbelievable that people have these massive ponds in their backyards:
Nevertheless, it’s a wildly popular fish on dinner plates every night. Including ours last week, in my latest cooked-up creation. If you liked my Parmesan Crusted Tilapia, you’ll definitely love this one!
