What if I told you… I tried to make a berry coffee cake, failed miserably, and ended up with this berry cake instead? Hey, I’m honest! Luckily, it was pretty delicious, could still be eaten for breakfast and it had a sweet, oat-y crumbly top.
If I were to make this again, I’d probably stick to white flour (I used a combination of white and whole wheat, thus its darker color) and use 2 or 3 cups of berries so that there was one in every bite. Next time!
Retrospect serving suggestions…
- If you’re not a fan of berries, I could see replacing them with 4 diced apples tossed in extra cinnamon. Hello, fall!
- Eat while the cake is piping hot from the oven. Or, re-heat a slice in the microwave for 30 seconds. It’s worth the extra step.
- Plop a scoop of vanilla bean ice cream on top of this warmed-up goodness. You won’t regret it.
Berry Cake
Ingredients
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup light brown sugar
- 2 tablespoon butter, softened
- 2 tablespoons canola oil
- 2 eggs
- 1 teaspoon vanilla
- 2/3 cup vanilla Greek yogurt (such as Chobani or Light & Fit)
- 1 cup mixed berries (I bought them frozen, heated up on stove top & drained – use 2 cups if you have it! I felt my end product need more)
Crumble topping
- 1/2 cup old fashioned oats
- 1/4 cup flour
- 1/2 cup light brown sugar
- 4 tablespoons butter, softened
- 1 teaspoon cinnamon
Directions
- Preheat oven to 350 degrees. Grease a 9×9 dish.
- Make the crumble: mix the oats, flour, light brown sugar, butter and cinnamon. Set aside.
- In a medium bowl, combine flour, baking soda and salt.
- In a separate bowl, mix the light brown sugar, butter and canola oil (I used a hand-held electric mixer). Beat in 1 egg at a time, then add vanilla and yogurt. Fold in the berries.
- Fold the dry ingredients into the wet.
- Pour the batter into your greased dish. Sprinkle the crumble on top.
- Bake for 40-45 minutes, or until a toothpick inserted in the middle of the cake comes out clean.
- Store covered with plastic. And when eating, be sure to heat your slice up in the microwave for 30 seconds! Would be delicious with a scoop of vanilla bean ice cream.
