Leftover, cold coffee… never to be wasted in this house. Hubs treats his coffee like liquid gold, which has sort of rubbed off on me.
In medical school Hubs would make a 12-cup pot and drink the entire thing in one night. I suppose that comes with the territory when you’re told to learn everything in 4-inch thick textbooks. But, oh my God! If I did that I’d be up for an entire week!
Needless to say, now with early hospital hours Hubs still needs massive amounts of caffeine to feel its effect. We usually make a full pot then make iced coffees from its cold leftovers – not a drip to be wasted!
This is perfect for hot summer days and is probably the fastest iced coffee you’ll ever make. If you have EXTRA COFFEE and EXTRA TIME, you should make coffee ice cubes (thank you, Pinterest!) and use them in lieu of regular ones.
Also, you can use whatever brand of coffee you like but I always opt for Folgers Coffee. It’s a medium roast and just so delicious. Or, another favorite is Starbucks’ Pikes Place Roast.
