In the morning, Hubs lovesssss his iced coffee. And according to him, the weekend is requires “real” bacon [and not that turkey bacon I try to buy instead] that’s extra crunchy.
So, that said… last weekend I bypassed my usual way of cooking bacon (in the oven, sprinkled with brown sugar – YUM! – or stove top, fried) and opted for the method his Dad always used… via the reliable microwave.
To cook bacon in the microwave, lay two paper towels on a plate, top with 5 or 6 slices on bacon that are evenly spaced, then cover with two more paper towels. Cook in 2-minute intervals until desired crispiness. It’s not the BEST way to cook bacon, but it’s sure timely and doesn’t make a mess of your stove.
This bacon lover’s fried egg is an easy breakfast that, along with the cheated way I cooked the bacon, you could have made within 15 minutes. It’s a delicious egg, topped with crunchy bits of bacon. Of course, you also have to serve some on the side!
Bacon Lover’s Fried Eggs
Serves 1
Ingredients
- 4 slices of bacon, cooked (see my cheat-sheet microwaved version above)
- Cooking spray
- 2 eggs
- Salt and pepper
Directions
- Spray a small frying pan with cooking spray (like Pam) and heat over a medium flame (or burner!).
- Once the pan is hot, crack the 2 eggs in the pan. Sprinkle with salt and pepper.
- Meanwhile, chop up 1 slice of the cooked bacon.
- Before you flip the egg over to cook the other side, sprinkle the “gooey” side with the bacon bits.
- Flip and cook until lightly brown. Serve with remaining 3 slices of bacon on the side.
