Aside from the tortilla, this wrap is loaded with protein (why hello, chicken and peanuts!), veggies and an amazing crunch. I was a very happy lady when these crossed my kitchen last week. I have no idea what qualifies these as being Thai (other than the peanut sauce), but it seemed fitting. Hah! Enjoy.
Crunchy Thai Chicken Wraps

Ingredients
- 4 whole chicken breasts, trimmed of excess fat and cubed
- Canola oil
- 3 carrots, peeled and cut into strips
- 1 cucumber, cored and cut into strips
- 4 whole wheat tortillas (optional: toasted)
- 1 cup fresh spinach
- 4 tablespoons peanut sauce
- 4 tablespoons peanuts
Sauce
- 2 tablespoons rice vinegar
- 1/2 cup soy sauce
- 2 teaspoons sesame oil
- 2 teaspoons hot chili oil
- 6 tablespoons lime juice
- 1 tablespoon fresh ginger, minced
- 1 tablespoon light brown sugar
- 2 teaspoons cornstarch
- 2 tablespoons honey
Instructions
- In a medium bowl, whisk the rice vinegar, soy sauce, sesame oil, hot chili oil, lime juice, ginger and brown sugar.
- Pour half into a separate bowl and add the cubed chicken to one.
- In the other bowl, add cornstarch and honey. Set aside.
- Over medium high heat, drizzle a skillet with canola oil. Add half of the chicken (leaving most of the liquid in the bowl) in a single layer. Cook for 1 minute, then stir and cook additional 3-4 minutes. Transfer cooked chicken to a separate plate.
- Repeat for remaining chicken.
- Once cooked, add the plated cooked chicken back to the pan. Including remaining sauce in the bowls.
- Reduce heat to low and stir. Simmer for 2-3 minutes then turn off the heat (note: if sauce isn’t thick enough for you, put the heat back on and add a little more cornstarch, then stir for 1 minute).
- To serve, lay a tortilla (toast, if you like) on a large plate. Add spinach, chicken, 2 or 3 carrot strips, 2 or 3 cucumber strips, a sprinkle of peanuts and a drizzle of peanut sauce.
- Roll tortilla, fastening with toothpicks.
