Who could ever grow sick of pumpkin? Its scent is so warm and buttery, just like home is supposed to smell. It goes along with autumn’s crisp, cool nights and crunchy leaves that dance along the sidewalk (which absolutely brings a smile to my face whenever I step on an extra crunchy one!).
The greatest part about this recipe is that it doesn’t take hours to make, like traditionally chili in the crock pot for 4-6 hours. With prep and cooking, you could have this seasonal chili ready for dinner within an hour. Be sure to taste the chili along the way, adjusting the seasoning as your taste buds like!

Ingredients
- 2 tablespoons oil
- 1 small yellow onion, chopped
- 1 green bell pepper, chopped
- 2 jalapenos, seeded and minced
- 3 garlic cloves, finely chopped
- 1 pound ground turkey
- 1 can (15 ounces) diced tomatoes, with its liquid
- 1 can (15 ounces) pumpkin puree (or if you have the BIG can of pumpkin puree, throw in an extra 2 ounces)
- 1 cup water
- 4 tablespoon chili powder
- 1 teaspoon pumpkin pie spice
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- Pepper to taste
- 1 can (15 ounces) red kidney beans, rinsed and drained
- Sour cream or cheese (optional)
Instructions
- In a stock pot, heat oil over medium-high heat.
- Add onion, pepper, jalapeno and garlic, stirring frequently until tender (about 5 minutes).
- Add turkey, mix in well and cook until no longer pink.
- Add tomatoes, pumpkin, water, chili powder, cumin, pumpkin pie spice, salt and pepper. Bring to a boil.
- Reduce heat to medium-low and add beans.
- Cover and simmer, stirring occasionally for 30-40 minutes.
- Serve with a dollop of sour cream or cheese.
