Talk about a kitchen experiment! I had half a bottle of Snapple’s Pink Lemonade and barely a glass of Trader Joe’s French Market Sparkling Lemonade in my fridge – and I knew if I didn’t use them up, they’d just sit there. And, voilà! That’s how this recipe was born.
It’s probably one of the simplest dishes in the world. Throw everything in a pot and it works its own magic. Hel-lo, Wednesday (is-it-Friday-yet?) night dinner! The shrimp is moist with citrus-y flavors, hints of garlic and a little kick from the red pepper flakes.
I bet if you marinated the shrimp in the lemonade/garlic mixture overnight, skewered the shrimp and grilled them… well, they would be glorious! Either way, it’s a skinny, low-carb dish… perfect for all us ladies with swimsuits in our near future. Enjoy!
- 1 pound shrimp, peeled and deveined
- 1 1/2 cups lemonade
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/8 teaspoon red pepper flakes
- In a medium pot, bring all of the ingredients to a boil.
- Cover and remove from heat. Let sit 8-10 minutes.
- Drain and serve.
