Oh sweet lord. What have I discovered. A single serving deep dish cookie — this may be my worst enemy. Or best friend. I haven’t yet decided.
After dinner tonight Mike, my husband, groaned to me about not having a single piece of dessert in the apartment. I could only offer him a handful of chocolate chips which he was none too thrilled about. Then it hit me — aha! I remember seeing a pin about a single-serving cookie that takes under 2 minutes to cook.
When I mentioned this to him, he looked at me blankly and exclaimed, “What!” as if I were hiding a deep, dark secret and this was the first I was telling him. I seriously couldn’t stop laughing! LOL
Okay, okay – here’s the recipe!
{Single Serving} Deep Dish Cookie

Ingredients
- 1 tablespoon butter, melted
- 1 tablespoon white sugar
- 1 tablespoon brown sugar
- 1 dash of vanilla
- pinch of salt
- 1 egg yolk
- 1/4 cup flour
- 2 tablespoons chocolate chips
Directions
- In a bowl, mix together the butter, sugars, vanilla, and egg yolk. Oh, what’s that? You don’t know what a “dash” or “pinch” equals? Lucky me… a good friend, Kim, sneakily bought me these special measuring spoons when we were both shopping in Chester, N.J. In the store, I thought they were adorable and she convinced me she was buying them for her Mom. Until I opened them as part of her Wedding Shower gift. That Kim!
- Add in the flour and salt. Mix until combined. Add in the chocolate chips. Put the dough into a small microwaveable bowl or coffee cup.
- Microwave for 40-60 seconds or until the cookie looks done. Best served warm with a spoon and glass of cold milk… enjoy!
