You know a good corn muffin in the first bite. The perfect balance of sweet and grainy cornmeal, with a sticky top.
I was thrilled to come across this recipe from the Neely’s. Although corn muffins are fantastic for breakfast, toasted with a smear of butter… I made these to go along with dinner one night (and, for the life of me… I can’t remember what the heck I made a week ago!).
This is what I remember from baking these:
- More than likely, you have all of these ingredients in your fridge/cabinet.
- You just mix the ingredients and pour into muffin pan – nothing fancy about that.
- They bake while you cook, making it easy to multi-task.
- When you put these on the breakfast/dinner table it looks like you spent a lot of time in the kitchen – NOT!
I hope you enjoy these as much as Hubs and I did! Wrap them up individually in plastic wrap and bring them to work for a mid-morning snack. You won’t regret it.
Sweet Honey Corn Muffins
Yields 12 muffins; recipe slightly adapted from Down Home with the Neely’s
Ingredients
- 1 cup yellow cornmeal
- 1 cup flour
- 1 tablespoon baking powder
- 1/2 cup sugar
- 1 teaspoon salt
- 1 cup milk
- 2 eggs
- 1/2 stick butter, melted
- 1/3 cup honey
Directions
- Line a 12-cup muffin tin with liners or spritz cups with cooking spray.
- Preheat oven to 400 degrees.
- In a large bowl, mix the cornmeal, flour, baking powder, sugar and salt.
- In another bowl, mix milk, butter, eggs and honey.
- Add the wet ingredients to the dry, stir well.
- Evenly divide the batter among the muffin cups.
- Bake for 15-20 minutes, or until tops are lightly brown.

just finished making these using your recipe. i don’t know what i did wrong but when i was done mixing the wet into the dry it was really watery. but they actually still turned out really well!
Hi Jess! I’m glad you liked these muffins! The batter isn’t very thick and I had the same reservations about these turning out well once I put them in the oven… but the Neely’s (original recipe) know their batter!
